German Potato Soup - Kartoffelsuppe

Ingredients
 
 

  • 1 kg potatoes floury cooking
  • 70 g celery root
  • 1 carrot
  • 1 onion
  • 1200 ml stock
  • 2 tablespoon olive oil
  • 2 bay leaves
  • salt
  • pepper
  • 100 g double cream

Optional

  • 150 g bacon
  • 4 sausages

Instructions
 

  • Peel the onion, carrot and celery. Cut them into small cubes.

  • Peel the potatoes and cut them into cubes as well.

  • Heat the olive oil in a pan and fry the diced onions until translucent. If you want to use bacon, add it now.

  • Add the vegetables, bay leaves and potatoes and pour in the stock. Cook the potato soup for 15 minutes.

  • Add the double cream and blend the soup with a hand blender until creamy. Season with salt and pepper. If you don’t have an immersion blender, you can also use a potato masher or mix the soup in your regular blender.

Notes

You can keep the potato soup in the fridge for up to 3 days. You can also freeze it. For best results, defrost it at room temperature. Then boil it briefly on the stove or put it in the microwave before serving.
