German Potato Pancakes - Kartoffelpuffer

Ingredients
 
 

  • 1 kg potatoes
  • 1 onion
  • 2 eggs
  • 120 g wheat flour
  • 1 teaspoon salt
  • pepper
  • nutmeg
  • sunflower oil or any other neutral-tasting oil for frying

Instructions
 

  • Peel the potatoes and grate them. Then, squeeze them properly to remove as much potato juice as possible.

  • Peel the onion and chop it very finely.

  • Mix the grated potatoes with the chopped onion, eggs, salt and flour. Grate in some pepper and nutmeg.

  • Heat the sunflower oil in a large pan and fry the potato pancakes one at a time. I use a tablespoon of batter for each pancake and fry about 3 potato pancakes at once. I keep the fried potato pancakes warm between two plates until all are ready.
